Gourmet Cheese
 

Explorateur – Produced in Petit Morin, France, this triple-cream cow’s milk cheese is ripened for 3 weeks creating its delicate flavor reminiscent of wild mushrooms and toasted hazelnuts.                                                                                           
Humboldt Fog – Located in Arcata, California, Cypress Grove Chevre’s signature offering is a young goat’s milk cheese with a ribbon of edible vegetative ash running through its creamy center.      
                                                                                     
Goat Cheese – Pristine white color and distinct flavor, this delectable treat has a refreshing, tart flavor and creamy texture.

                  
Pittig Gouda – This Dutch cow’s milk cheese is studded with tiny, white specks that give it a unique crunchy texture. Having aged for four years, it has a developed flavor of butterscotch and caramel.                                                                                     
Aged Cheddar – This cheese strikes the perfect balance between sharpness and creamy texture.
                                               
Brie – A cheese with cow's milk, soft dough crust, straw yellow, creamy and soft.


Midnight Moon – Aged goat’s milk cheese with nutty, brown-buttery flavors with caramel notes. This firm, dense and smooth cheese is exclusively made for Cypress Grove Chevre.
 

White Stilton with Mango & Ginger – This mild white Stilton with the addition of pieces of mango and spicy ginger to the crumbliness of the refreshing stilton cheese is something you need to try as you may be surprised.
 

Papillon Roquefort – This blue, sheep’s milk cheese is made with a penicillin mold from rye bread and has a complex, tangy flavor due to aging in oak planks in limestone caves in the south of France.                                                                                      
Parmigiano Reggiano – The most famous Italian cheese from Parma region, this cow’s milk cheese has a distinctive nutty and salty flavor due to the cow’s strict diet of grass, hay, and alfalfa.
 

Manchego – A sheep’s milk cheese from Spain, this cheese is aged for five months. Tasting similar to a feta cheese, a very limited amount is produced every year.  
 

Iberico – A hard cheese made from a mixture of cow’s, sheep’s and goat’s milk with flavor elements from all three. A Spanish cheese perfect with red wine.
 

Pecorino Romano – This Italian cheese from sheep’s milk has a hard and crumbly texture and sharp and salty flavors. 

 


 

Charcuterie – Cured Meats
                                     

 

Jamon Serrano – Literally translating to “Mountain Ham,” Jamon Serrano comes from the famous white pig of the mountainous regions of Spain. Fed cereals and cold-cured for 15 months, Jamon Serrano has a delightfully nutty, earthy flavor.                                               

 

Prosciutto di Parma – Only salt is allowed to be used in the traditional curing of this Italian meat from Emilia-Romagna. Aged for 12 months, it develops the sweet and salty taste that we have come to know and love.                                                            

 

Molinari & Sons Sopressata – Hailing from San Francisco, California, this is an all-pork salami that is dry-cured and seasoned with Burgundy wine.                               

 

Spicy Coppa – Salt & spice rubbed pork shoulder, slow-aged for 45 days to develop tenderness & fragrance

 

Palacios Chorizo – A hand-crafted Spanish classic, this mild dry-cured pork sausage gets its flavor from the typical Rioja seasoning of paprika.

 

Salami – Herbes de Provence dry salami delicately rolled in freshly dried herbs and spices.
